Domaine Garnier, a 23-hectare estate located in Ligny-le-Châtel, stands as the northernmost producer of Chablis. Established in 1985 by the now-retired Joseph, who transitioned from cereal farming to a 4.2-hectare vineyard by his final bottling in 1992. Eldest son Xavier assumed control, later joined by his brother Jérôme in 2000.

The domaine, adhering closely to organic principles, specializes in Petit Chablis and Chablis, complemented by Premier and Grand Cru wines sourced from meticulously picked and vinified grapes. Spread across the villages of Maligny, Ligny, and Villy, their Chablis holdings span both the left and right banks.

Deviating from conventional practices, Domaine Garnier employs yields 10% lower than the appellation norm, exclusive use of indigenous yeasts, and a patient élevage approach. Wines are not rushed into bottles, with Premier Crus aged for up to 18 months. Recent use of 500-liter and 600-liter Stockinger barrels enhances the individuality of each wine. Sulphur levels, significantly below the norm, average 40-50mg/l.

Planting vines in 1985 on high-quality rootstock, the brothers focused on Kimmeridgian limestone, cuve-aging the wine before bottling after one year with approximately 50mg/l total sulfur. The resulting wine reflects a distinct maritime character, reminiscent of a delectable oyster, with iodine and saline notes. Expert viticulture and lower yields contribute to the wine's remarkable texture and balance.
