In the 16th and 17th centuries, the Order of St. Ursula of the Roman Union established the Ursulines, a religious order dedicated to the education of young women. The Ursuline convent in Nuits-Saint-Georges, Burgundy, once seized during the French Revolution, has been transformed into a captivating wine cellar by Jean-Claude Boisset. As a new-generation winemaker in Burgundy, Boisset has gained recognition for the purity and elegance of his wines.

The Jean-Claude Boisset Chardonnay Les Ursulines, named after the convent where it is produced, originates from old Chardonnay vines cultivated using sustainable agriculture. Hand-harvested in 20 kg boxes, the grapes undergo a gentle two-hour pressing. The juice is then transferred to barrels at 12ºC, where it remains on its lees. The extended fermentation, lasting about 10 months with native yeasts, contributes to the wine's complexity. After fermentation, half of the wine is aged in French oak barrels for 14 months, while the other half is kept in stainless steel tanks.
