Little Pomona - Wading In 2021

The first bottling of Wading In last year was a real winner and a true highlight of the summer in 2022, this next vintage has been highly anticipated indeed. The same single variety of Egremont Russet apples but a different method this time round. Hand-picked, hand-selected, perfectly ripe fruit were pressed into stainless steel and left to ferment spontaneously. Towards the end of fermentation, the cider was racked into a selection of 2nd and 3rd use ex white burgundy barrels to undergo a malolactic fermentation and age on the fine lees without battonage.

After 11 months in barrel, the ciders had developed real elegance and complexity, whilst remaining pure and fresh. Bottled still, under cork and with a wax top.

aromatics that greet your nose as it reaches the glass. Itʼs

got a beautiful creamy mouthfeel, succulent juicy acids and a distinct minerality at the finish. Abv 8.3%
