The 2021 blend brings together Kingston Black, Stoke Red and Bramley, with 72% bittersharp cider apples and 28% sharp culinary apples. The fruit was vinified separately in oak before being blended and aged for 10 months in 2 to 4-year-old Champagne barrels. \u003cspan class=\"contents\" data-content-reference-start=\"417\" data-content-reference-end=\"449\"\u003e\u003cspan class=\"\" data-state=\"closed\"\u003e\u003c\/span\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"auto\" data-start=\"456\" data-end=\"880\"\u003eThe result is rich and concentrated but still beautifully fresh, with dried fruit, bramble and caramel alongside a powerful saline streak. There's plenty of depth from the bittersharp apples, while the Bramley brings bright acidity. The finish is long, with tropical fruit and a touch of sweetness.
