Sylvain's red Marsannay, crafted from 50 year old vines that are aged in a mix of 2-10yo barrels - with 25% of the grapes being whole-bunch fermented. The bouquet is full of dark berries and wild brambly shrubs, with fine precision. The medium-bodied palate reveals mulberry and red plum notes, balanced by moderate acidity and a subtle meaty finish. The fruitiness is vibrant but well-balanced, and plays nicely against the more earthy leather notes on the finish. Slightly unconventional, yet thoroughly delightful, this is an extra-ordinary village level Burgundy.
Sylvain Pataille is a young winemaker, trained in Bordeaux and bringing a fresh approach to Burgundian winemaking. A dedicated advocate of organic and biodynamic practices, he now oversees a range of vineyards scattered across Marsannay. With minimal yields, biodynamic viticulture and a gentle winemaking approach using only indigenous yeasts and minimal sulphur, Sylvain produces extraordinary wines known for their remarkable balance, seamless texture, and a distinct minerality that reflects the essence of Marsannay's great terroir.
