Aquiline Shiraz

The Aquiline Shiraz is a blend of Paarl and Swartland fruit, utilizing a natural fermentation process without crushing, resulting in a supple and flavorful Shiraz presented in a fresh and approachable style. Grapes sourced from Paarl and Swartland's foothills yield low yields and concentrated berries. Handpicked and naturally fermented in stainless steel tanks, with 25% undergoing whole bunch fermentation to enhance tannin quality. After daily pump-overs during fermentation, 15% of the wine undergoes malolactic fermentation and a few months of aging in older 300-liter barrels. The result is a ripe and fragrant Shiraz with youthful cherry and redcurrant notes, a touch of white pepper, medium-bodied and rounded with warm red fruit flavors, balanced by fresh acidity, gentle tannins, and a hint of spice.
