Axel Pauly, a dynamic young star in German winemaking, has perfected his craft across Germany, California, and New Zealand before taking over his family's estate in the Mosel from his father. The Pauly estate, spanning 10 hectares, is primarily located in Lieser in the heart of the Mosel Valley, with a small parcel in Bernkastel. The label features the Mosel hills which, when turned on their side, reveal the "Tres Naris" or "three noses" of Axel, his father, and his grandfather.

The grey and blue slate soils of Lieser, cooler than the red slate in Bernkastel, result in more mineral-rich wines. The Pauly vineyards are steep and challenging to cultivate. Axel ensures flavor ripeness in the fruit through crop thinning, leaf plucking, and selective grape harvesting.

Axel's winemaking approach includes using indigenous yeasts until late in the fermentation process, when he introduces cultured yeasts to preserve the vineyard's character in the wines. The Pauly range is noted for its stunning quality and purity, from the dry and quaffable 'Tres Naris' to the pristine and steely 'Purist' and the traditional medium-dry 'Generations'.

The fruit for his two single-vineyard Mosel Rieslings comes from the steep Niederberg-Helden site. The off-dry Kabinett 'Lieserer Niederberg-Helden' is charming and lively, while the dry 'Helden'—meaning 'Heroes'—is sophisticated, elegant, and wonderfully concentrated.
