But the decision to give it a bold new direction elevated it into something far more expressive. For five additional years, it rested in a First Fill Mitchell’s Australian Shiraz cask — a barrel brimming with vibrant red fruit memory, ripe tannins, and a sun-baked Australian intensity.

Those five years mattered.

What has emerged is a whisky built for those who crave presence. Layers of dark berry compote, grilled stone fruits and syrup-drenched figs swirl around Mortlach’s muscular core. Texture takes centre stage — there is chew, oiliness, depth. As the spirit spreads across the palate, umami notes unfold, mingling with the distillery’s signature savoury richness, giving an almost broth-like warmth before cascading back into sweet, spiced fruit.
