Sourced from a mature, southeast-facing site in Chablis, France, this Chardonnay reflects Lavallée's commitment to organic farming since embarking on his independent winemaking journey in 2018.

This wine is crafted entirely in stainless steel, including maturation on fine lees, preserving the purity of the fruit and the characteristics of the terroir. With its chiseled profile and vibrant energy, it embodies the essence of what Chablis should be: crisp, refreshing, and full of character.

Clément Lavallée's story is one of passion and determination. After studying wine for eight years, he returned to his family domaine in Saint-Bris-Le-Vineux, near Chablis, with a vision to work naturally and sustainably. Despite initial conflicts with his father over differing views, Lavallée forged his own path, embracing organic practices and minimal intervention in the vineyard and cellar. His commitment to sustainability even extends to his choice of equipment, opting for an old tractor to minimize soil damage.

As his father recognised the merit of his approach, he entrusted Lavallée with additional vineyard land, totaling 3.7 hectares, to further expand production.
