Cloudwater Ikedas Wish

This experimental stout takes inspiration from classic smoked beers, with a creative twist. To introduce a rich umami character, the brewers used shiitake mushrooms as the smoke vessel—smoked on-site and added to the tank for the beer to circulate through. The result is a subtle peatiness that adds depth and complexity. Notes of caramelised molasses and soy sauce round things out for a truly unique and savoury stout experience.
