A recent addition to the Macle lineup is an oxidative wine crafted from 50-year-old Chardonnay vines planted in limestone clay soils on Château-Chalon’s north-facing slope, akin to his Chardonnay ouillé. Vinified and aged under flor for three years, this wine is more subtle and forward than the traditional oxidative Chardonnay/Savagnin blend, showcasing a notable morel flavor, appealing spices, and a distinctly saline finish.
Run by Laurent Macle, Domaine Macle is renowned for producing some of the finest oxidative wines in the Jura. Established by Laurent’s father, Jean, in 1966, the family's winemaking roots trace back to the 1850s, originally under the surname Mascolino from Italy. Laurent, who has helmed the domaine for over 20 years, now collaborates with his sister Christelle, who stepped into their recently retired mother's role. With several experimental cuvées, the domaine has returned to organic farming, cultivating 4 hectares of Château-Chalon and 8 hectares of various oxidative wines, which are aged for shorter periods than the Château-Chalon, alongside a few barrels of topped-up wines. The Château-Chalon vineyards, with their grey marl soils, are ideal for the Savagnin grape, harvested ripe without any noble rot. Laurent emphasizes the importance of their 17th-century cellars, which maintain a stable temperature range, preserving the wine’s delicacy and complexity. Their legendary Château-Chalon, sold mostly to loyal private customers, boasts extraordinary resonance and elegance, vibrant acidity, and complex flavors that evolve with age. Even their Côtes du Jura wines can age comfortably for 30 years.
