Our Sur Lie is a masterful blend of 2–3 different vintages, aged in French oak barrels for added depth and complexity. The younger vintages bring fresh, subtle fruit notes, while the mature ones add richness and intrigue. ‘Sur lie’—a French winemaking method meaning "on the lees"—allows the wine to rest on its residual yeast, a technique famously used in Champagne to enhance texture and depth.

Though the estate dates back to 1305, the winery itself was a happy accident. Harald Krabbe, once selling off his 24 hectares of Stevnsbær cherries, was encouraged by a chef and journalist to turn his exceptional fruit into wine. The result? A bold, vibrant cherry wine with bright acidity and serious attitude.

Tasting Notes

The French term ‘sur lie’ means that wine is left to rest on its sediment, or residual yeast particles, for an extended period.
The method of allowing wine to be in contact with the spent yeast is primarily one used in the French province of Champagne. It produces a richer and deeper tasting wine.
Sur Lie is aged in French oak barrels and is the result of an amalgamation of 2-3 different vintages.
The amalgamation of mature and young vintages lends this wine a further degree of complexity: the younger vintages provide fresh and subtle fruity notes, while the mature ones provide more complex tones.
