More About Pilzer Grappa di Moscato Giallo

In 1957 Bruno Pilzer’s father founded the Pilzer grappa distillery in the Val di Cembra, in the heart of Trentino.

Most of the grapes used in the production of their grappa come from the Val di Cembra or Lavis, meaning they can be distilled promptly after fermentation. Pilzer works with only the very best raw materials, saying, "You cannot make a good grappa from poor grapes". Another of Pilzer’s ‘secrets’ was inspired by a visit to Scotland many years ago: "I saw that, in the production of whisky, they dispensed with the ‘heads’ and ‘tails’ of the distillate, as these contained greater levels of unclean higher alcohols. Although this is not standard in the production of grappa, when we introduced this practice, we found it produced a much cleaner grappa." Each grape variety is distilled differently to retain as much of the grape's character as possible. The grappas are then held in tank at a high alcohol level until just before bottling to keep them fresh.

Delicate with an aromatic, fresh grapey nose with a hint of spice. Intense on the palate with a long finish.

In northern Italy, distillation often feels less like an industry and more like a family obsession passed down through generations. Pilzer sits firmly in that tradition. Based in the Val di Cembra in Trentino, the distillery has spent decades building a reputation around grappa, fruit spirits and alpine liqueurs without ever drifting too far into flashy luxury branding.

The heart of the range is grappa, produced from carefully selected pomace and distilled with remarkable precision. Good grappa should carry freshness, texture and aromatic detail rather than simply reminding you that alcohol exists. Pilzer generally lands on the right side of that line. Expect floral notes, orchard fruit, herbs and gentle spice depending on the grape variety involved.

The mountain setting plays a role too. Trentino’s cooler climate and strong agricultural traditions shape the ingredients and the style of distillation. Fruit spirits made from pear, plum and other local produce often feel every bit as important as the grape-based releases.

What makes Pilzer particularly appealing is restraint. The spirits are expressive without becoming aggressive, and the oak-aged bottlings add complexity without burying the fruit underneath layers of wood. There is a confidence to the range that comes from experience rather than marketing.

For people only familiar with rough holiday grappa served at the end of long meals, Pilzer is a useful reminder of how elegant the category can actually be.
