Vidal is a blend of 12- and 24-month oak-aged mixed fermentation saisons, crafted with malted barley, rye, and both raw and malted wheat. The boil featured aged Jester and Goldings leaf hops, while fermentation was driven by a mixed culture of Saccharomyces, Brettanomyces, and lactic acid-producing bacteria.
Primary fermentation took place in an open-top stainless steel tank over two weeks before the beer was transferred to freshly steamed and purged French oak barrels for a slow, secondary fermentation. Over time, the beer underwent a complex transformation, developing a subtle acidity. Once matured, it was carefully blended and lightly dry-hopped with Saaz and Goldings for a brief period before packaging. The final beer has been conditioning for five and a half months.
