Annona maricata is the generic species name, but it also goes by soursop, gaviola, guyabano, guanábana, custard apple, sirsak, mãng cầu, sugar-apple, durian belanda, lampun, or durian salat, just to name a few. It's wild to think that this fruit transcends cultural and culinary boundaries as efficiently as it does. If all the cool kids are eating it, we figured we had better get around to joining the party. With its tropical character it slides alongside our Brettanoyces flavour profile seamlessly. Post attenuation perceived sweetness is abound, despite the dry nature of this blend.
