Unico Zelo Tropo Big Red 2021 is a bold, fruit-forward red blend from the Adelaide Hills crafted by Brendan and Laura Carter. It’s built around a near-even mix of Syrah and Merlot from the Birdwood vineyard, grown on alluvial quartz and clay soils. Fermented using indigenous yeasts and minimal intervention, the wine undergoes a brief maceration (7 days), followed by stainless-steel handling to preserve freshness and pure fruit expression.

The palate delivers juicy dark fruit, blueberry, dark cherry, with savoury elements of green olive and dried herbs, plus a subtle herbal edge. Tannins are fine and restrained, balanced by zippy acidity that keeps it lively rather than heavy. The finish is long with spice and savoury fruit lingering.
