Étienne Fort, an advocate of organic farming, is the skilled producer behind this sparkling white Crémant from the Cremant De Limoux AOC in Languedoc, France. A blend of Chardonnay, Chenin Blanc, and Pinot Noir, this NV vintage boasts a 12.5% alcohol content in a 75cl bottle. Étienne's meticulous winemaking involves wild yeast fermentation in old demi-muids, followed by 6 months of ageing. The secondary fermentation and subsequent 12 months on lees take place after bottling, resulting in a wine disgorged with zero dosage. With vines situated at a high altitude of 450m, the grapes maintain low yields, preserving freshness and cut, contributing to the slightly more complex nature of this Crémant.
Prior to establishing his own domaine in 2011, Étienne Fort supplied high-quality grapes from his family's Château St Salvadou to the local co-op, where they were used in generic sparkling wine. Recognizing the superior quality of his fruit, Étienne decided to create his own domaine-bottled Crémant and Blanquette de Limoux in 2013. His 11ha vineyard, boasting older vines in deep limestone-clay soils at the highest elevation in the appellation (450m), emphasizes respectful farming practices. Inspired by great Champagnes, all fruit is harvested manually, ensuring the exceptional terroir's true expression in each bottle.
