This marks the brewery’s third release of Still, after discovering another barrel with enough character and balance to stand on its own, without the need for carbonation. For this edition, a small dry-hop of New Zealand-grown Nectaron was added to enhance and amplify the underlying fruit notes in the aged beer.

The wort was crafted using a turbid mash of Maris Otter, toasted Munich malt, and rye, creating a rich, silky body. It underwent an extended boil with generous amounts of aged hops before spending two nights in the coolship for a double inoculation. Spontaneously fermented in a single 350-litre barrel, the beer matured for three years before being bottled without priming sugar, allowing for a naturally still final product. After resting in the bottle for three months, it was ready for release.

The finished beer presents a refined balance of acidity, oak tannin, and hop bitterness. Without carbonation, the silky texture of the rye takes center stage, offering a uniquely smooth drinking experience.

There’s a certain kind of brewery that feels less like a modern beer company and more like a quiet obsession that accidentally became available to the public. Mills Brewing fit firmly into that category.

Based in Gloucestershire, Mills focus almost entirely on mixed fermentation, barrel ageing and spontaneous-style beers inspired by traditional Belgian lambic and farmhouse brewing. Everything moves slowly here. Wild yeast, oak barrels and patience doing most of the work rather than endless dry hopping and release schedules.

The beers themselves can be stunningly complex. Tart citrus, hay, oak, cellar funk, herbs and mineral acidity all tend to drift through the glass somewhere, often changing completely as the beer warms up. Despite the sour profile, they rarely feel aggressive. There’s softness and balance underneath the acidity.

What separates Mills from plenty of modern wild beer projects is restraint. The beers feel deeply considered rather than experimental for the sake of it. Barrel character integrates properly, fruit additions stay subtle and everything retains remarkable drinkability despite the complexity involved.

English mixed-fermentation beer has quietly become world-class over the last decade, and Mills sit comfortably among the best producers in that scene. These are beers for people who enjoy wine, cider and fermentation generally as much as they enjoy traditional beer styles.
