00% Dimyat | Byala, Varna Region

This crisp, coastal white is made from over 40-year-old Dimyat vines grown near the wild Kara Dere beach. Rooted in calcareous soils and cooled by the Black Sea breeze, the grapes are handpicked and gently pressed, with fermentation kept cool to preserve fresh aromatics. Aged for three months on fine lees, the wine gains subtle texture and depth.

Bright citrus, white peach, and coastal salinity define the palate, balanced by a clean acidity and a refined, mineral finish.

Alcohol: 11% | Acidity: 6.6 g/L | RS: 0.8 g/L | Low intervention

May show a natural haze from lees.

Odessos

Style: Winery

Country: Bulgaria

Region: Black Sea Coast

Bulgarian wine has quietly become one of Europe’s more interesting underdog stories, and Odessos sits comfortably inside that modern wave of confident Black Sea winemaking.

Produced near Bulgaria’s eastern coast, the wines benefit from warm sunshine moderated by Black Sea influence, which helps preserve freshness surprisingly well despite the heat. International varieties like Cabernet Sauvignon, Merlot and Chardonnay appear regularly, though local grapes increasingly play a larger role too.

The reds tend to carry ripe dark fruit, spice and softer tannins with enough acidity underneath to stay food-friendly rather than overly heavy. Whites lean bright and aromatic, often showing citrus, stone fruit and a slightly saline edge from the coastal climate.

What makes modern Bulgarian wine enjoyable generally is the value. Good vineyard land, long winemaking history and improving cellar techniques mean producers can make genuinely characterful wine without the prices becoming ridiculous.

There’s also a growing confidence now around regional identity rather than imitation international styles. Wines like Odessos feel increasingly tied to the Black Sea landscape rather than simply trying to copy somewhere else entirely.
