88 Brewery

88 Brewery are an Edinburgh-based project built around one very specific and very Scottish idea: taking the country’s long history of strong ales and pushing it to a completely ridiculous extreme. The brewery are best known for Scottish Beithir Fire, a fortified barley ale that sits somewhere between beer, spirit, and pure chaos, inspired as much by Scotland’s distilling tradition as its brewing history. It’s the sort of thing that could only really come from a country with this much confidence around alcohol production in the first place.

What makes the project interesting is that it never really pretends to be part of the modern hazy IPA craft beer world. Instead, 88 Brewery lean fully into spectacle, strength, and the slightly surreal idea of beer becoming something closer to a sipping spirit. There’s a bit of old-school Scottish humour running through it too. Big warning labels, mythology-inspired branding, dragon fire references, and absolutely no attempt to downplay how extreme the whole thing is.

At the same time, there’s still a real connection to Scotland’s brewing and distilling culture underneath the novelty. The brewery talks openly about combining traditional barley ale brewing with spirit production techniques, which places them in that strange little corner where beer and whisky culture start overlapping. Whether people approach it out of curiosity, disbelief, or genuine enjoyment, it’s definitely one of those producers people remember after trying it once.
