Domaine Jonathan Pabiot
Pouilly-Fumé, Loire Valley, France
Domaine Jonathan Pabiot is a family-run estate in Pouilly-sur-Loire, specialising in Sauvignon Blanc from the vineyards of Pouilly-Fumé. Jonathan took over part of the family vineyards in 2005 and quickly pushed the domaine towards organic viticulture, later achieving Demeter biodynamic certification in 2016. Today, the estate covers around 20 hectares, with a strong focus on expressing the different soils and sites around Pouilly.
The vineyards span several terroirs, including limestone-rich caillottes, clay-limestone soils and flint. These differences are central to the wines, giving Jonathan plenty to work with beyond Sauvignon Blanc’s familiar citrus and grassy notes. His approach is to farm carefully, harvest healthy grapes and intervene as little as practical in the cellar, allowing the fruit and its origins to lead.
The range includes Elisa, a fresh, youthful expression aged on its lees in stainless steel and concrete, and Léon, sourced from older vines on clay-limestone soils and aged in tanks and large wooden vats for added texture. At the more ambitious end, Utopia comes from old vines planted on Kimmeridgian marl. It is fermented and aged with minimal additions in older barrels, giving the wine a more textured, individual style.
Jonathan’s wines show a different side of Pouilly-Fumé. Alongside the bright citrus, mineral freshness and flinty character associated with the appellation, there is often more breadth and texture than you might expect. His focus on organic and biodynamic farming, combined with a thoughtful approach to ageing, makes the domaine an interesting name for anyone who wants to explore Sauvignon Blanc beyond the usual crisp, uncomplicated style.
