Dr Fischer is one of the great modern Mosel Riesling projects and very strong evidence that Germany remains frighteningly good at making wines that somehow taste both feather-light and intensely complex at the same time. The estate sits in the Mosel Valley and is run in partnership with the Hofstätter family from Alto Adige, combining deep regional tradition with incredibly polished winemaking.
The wines focus heavily on Riesling from steep slate vineyards, producing bottles packed with lime, green apple, white peach and intense mineral tension. Mosel Riesling at its best carries this magical combination of precision, freshness and low alcohol that makes you wonder why anybody ever decided wine needed to be 15% and taste vaguely of oak furniture.
What makes Dr Fischer especially enjoyable is the clarity and balance running through the wines. Even sweeter styles stay vibrant and lifted thanks to razor-sharp acidity, while the dry wines carry loads of texture and depth underneath all the freshness. There’s elegance everywhere without the wines ever feeling fragile or overly delicate.
The whole estate also captures the wonderfully timeless feel of the Mosel itself. Steep vineyards, impossible-looking slopes and wines that somehow taste like liquid slate and citrus sunshine at the same time. Slightly nerdy perhaps, but absolutely delicious.
