Gaffel is one of Cologne’s best-known Kölsch breweries and pretty much woven into the city’s drinking culture at this point. Founded back in 1908, the brewery has spent generations producing crisp, refreshing Kölsch that perfectly suits long afternoons, noisy beer halls and the sort of sessions where you swear you’re only staying for one more round about six separate times.
Kölsch is a brilliantly simple style when done properly. Brewed like an ale but conditioned like a lager, it lands somewhere between the two with soft malt character, delicate fruitiness and a clean dry finish that makes it frighteningly easy to drink. Gaffel’s version leans classic and balanced, with gentle bready sweetness, subtle hop bitterness and a crispness that keeps you immediately reaching for another sip.
What makes Kölsch culture especially fun is how tied it is to Cologne itself. Traditionally served in small cylindrical glasses called Stangen, the beers arrive fresh and cold while servers quietly replace empties before you’ve fully realised your glass is gone.
