Simple Things Fermentations
Glasgow, Scotland
The name sounds modest enough. Then you start drinking the beers and realise quite a lot of thought has gone into these supposedly simple things.
Based in Glasgow’s south side, Simple Things Fermentations focuses on small-batch brewing that draws heavily from traditional beer styles while still allowing plenty of room for experimentation. The brewery talks openly about quality, tradition and doing things a little differently, which feels fairly accurate once you see the range.
Rather than chasing every passing trend, the beers often explore styles that do not always get much attention elsewhere. Scottish ales, saisons, lagers, smoked beers and mixed-fermentation projects all appear regularly, often with a strong sense of place running through them.
The brewery also enjoys working with ingredients that push flavour in unusual directions without turning the beer into a novelty act. Peated malt, local collaborations and barrel ageing all appear across the range, but usually in ways that still feel balanced and drinkable.
There is something refreshingly patient about the whole approach. Modern craft beer can occasionally feel like an endless race towards bigger releases and louder flavours. Simple Things seems far more interested in making beers people actually want to return to.
