Sylvain Boton

Sylvain Boton is part of a new generation of Loire growers arriving with enough respect for tradition to learn from it, but not so much that they're afraid to do their own thing. Originally from Tours, he spent time working with François Crochet in Sancerre, Le Rocher des Violettes in Montlouis and Domaine de la Chevalerie in Bourgueil before setting up under his own name in 2022. It was Bourgueil, and more specifically Cabernet Franc, that convinced him to stay.

His vineyards are scattered across several communes including Restigné, Benais and Ingrandes-de-Touraine, giving him access to a patchwork of soils that range from limestone-rich slopes to lighter, sandier sites. Farming follows organic principles, with a clear focus on vineyard health and allowing each parcel to speak with its own accent. It sounds like a cliché until you taste the wines and realise how different each site can be.

What stands out is the sense of restraint. These aren't heavily worked wines chasing concentration or impact. Instead, Boton seems more interested in texture, freshness and clarity. His Cabernet Franc has the fragrance and lift that makes the Loire such a compelling place for the variety, but there's substance beneath it too. The fruit feels precise rather than exuberant, with an earthy, stony character that roots the wines firmly in Bourgueil.

The cuvée Printemps captures the brighter, more immediate side of the domaine, all crunchy fruit and easy charm, while wines such as Racines and Les Haies dig deeper into the region's limestone and clay-rich terroirs. Even at this early stage, there's a confidence to the range that suggests a grower with a very clear idea of where he's heading.

Bourgueil has never lacked talented producers, but it's not often a new domaine arrives looking this assured from the outset. These are thoughtful, site-driven Cabernet Francs that feel far older than the name on the label would suggest.
