Mid Wales is not exactly overflowing with breweries making mixed-fermentation farmhouse beer aged in oak barrels. Wilderness seems perfectly comfortable occupying that particular niche.
Based among orchards and farmland in rural Wales, the brewery focuses on farmhouse-inspired beers, barrel ageing, wild fermentation and seasonal ingredients. Everything feels closely tied to agriculture, landscape and the slower side of brewing rather than rapid release schedules.
The beers often blur the line between beer, cider and wine. Mixed cultures, oak ageing and co-fermentation projects appear regularly, creating beers with acidity, funk, texture and remarkable complexity. Traditional farmhouse brewing influences sit alongside experimentation without either side taking over completely.
There is also an orchard element running through the project, which naturally feeds into collaborations between fruit, fermentation and barrel ageing. The result often feels more connected to rural food culture than modern craft beer trends.
Wilderness makes the sort of beers that reward patience and curiosity. Usually a fairly reliable combination.
