Allagash Brewing Company is one of the most influential breweries in American craft beer. Founded in Portland, Maine, in 1995 by Rob Tod, the brewery focused on Belgian-inspired brewing at a time when most American craft beer was dominated by pale ale, amber ale and porter. Its flagship beer, Allagash White, helped introduce a generation of American drinkers to Belgian-style witbier and became one of the defining beers of the US craft beer movement.

Over time, Allagash evolved far beyond Belgian-style ale into one of America's most respected producers of barrel-aged, mixed fermentation and spontaneously fermented beer. Alongside its classic Belgian-inspired styles, the brewery became especially influential through its work with wild fermentation and oak ageing, helping establish American wild beer as a serious category in its own right.

The brewery's Coolship programme remains one of the most significant spontaneous fermentation projects outside Belgium. Inspired by traditional lambic production, wort is cooled overnight in a coolship and exposed to wild yeast and bacteria from the Maine air before extended ageing in oak barrels and careful blending. The resulting beers often display layered acidity, funk, minerality, citrus character and remarkable balance, drawing comparisons with lambic while maintaining a distinctly American identity.

Alongside spontaneous fermentation, Allagash has earned a reputation for restraint, subtle complexity and technical precision rather than chasing extremes. From refreshing wheat beer and farmhouse-inspired saisons to barrel-aged wild ales and Coolship blends, the brewery continues to influence modern American beer culture through Belgian-inspired brewing, mixed fermentation and a strong emphasis on drinkability and elegance.
