Beak Brewery has become one of the most respected names in modern British craft beer, known for expressive hazy IPA, lager, saison and mixed fermentation beer brewed in the historic Sussex town of Lewes. Originally conceived as a nomadic brewing project by beer writer and brewer Danny Tapper, Beak spent several years collaborating with breweries across the UK before establishing a permanent home with its own brewery and taproom in Sussex.
Since opening in Lewes, Beak has built a strong reputation for hop-forward beer that combines softness, saturation and drinkability with a more restrained and thoughtful approach than many hype-driven modern IPA producers. Their pale ales and IPAs are known for bright tropical fruit character, smooth texture and careful balance, while lagers and lower-ABV beers retain the same emphasis on precision and freshness.
Alongside modern IPA and pale ale, Beak has become increasingly admired for mixed fermentation beer and farmhouse-inspired brewing projects centred around oak ageing, local ingredients and spontaneous fermentation. Many of these beers draw influence from Belgian saison, rustic farmhouse brewing and traditional European fermentation techniques while still feeling distinctly modern in approach.
Based in Lewes, a historic brewing town long associated with Harvey’s Brewery, Beak has become part of a wider contemporary Sussex beer culture alongside breweries such as Burning Sky and Abyss. Through its brewery, taproom and collaborative approach, Beak has established itself as one of the defining independent breweries in the modern UK craft beer scene.
