Meet the Producer, Medwyn Cellars

Medwyn Cellars

Style: Cidery

Medwyn Cellars is a small Scottish cider producer based in West Linton, making distinctive, low-intervention drinks that explore what fermented apples can do beyond conventional cider. The producer’s approach is experimental and hands-on, with a particular interest in ciderkin, a traditional technique that uses the leftover apple pulp from pressing to create a lighter, lower-alcohol drink.

The first release, Bowerkin, shows just how far that idea can go. Made using ciderkin from a 2022 cider, it was fermented naturally and rested on its lees for a year before being combined with Bacchus grape skins from biodynamic Ham Street Vineyard in Kent. After extended skin contact, locally foraged elderflower was added for a little floral lift. Bottled with fresh apple juice for natural conditioning, the result is a lightly sparkling, low-alcohol drink with apple, grape and elderflower character, plus a gentle funky edge.

Medwyn also makes Stokekin, a pét-nat ciderkin produced entirely from Stoke Red apples grown in Fife. These bittersharp apples are late-ripening and ruby-skinned, bringing their own acidity and tannic structure to the drink. The apples spend 24 hours on the pomace before pressing, with the finished cider left unfiltered to retain its natural character.

Medwyn Cellars is part of a growing Scottish cider scene that favours local fruit, thoughtful fermentation and a sense of place. Rather than chasing the familiar sweetness of mass-market cider, its releases are dry, lively and a little unconventional. These are bottles for anyone curious about cider as a craft in its own right, with plenty of overlap with the world of natural wine.
