Champagne Herbert & Co. “1000% Meunier” is a rare, terroir-driven grower Champagne made entirely from 100% Pinot Meunier, sourced from Premier Cru and Grand Cru parcels across the Montagne de Reims, including Rilly-la-Montagne, Ludes, Verzenay and Mailly.

Produced by the independent Herbert & Co estate, this cuvée represents a modern, low-intervention approach to Champagne making, with a strong focus on vineyard expression, barrel ageing and extended lees maturation. Pinot Meunier is often used as a blending grape in Champagne, but here it takes centre stage, showcasing its full depth, texture and aromatic richness.

Vinification takes place in Burgundy oak barrels (228L), followed by around three years on lees, building complexity, weight and a fine, persistent mousse.

On the nose, expect smoky oak, ripe orchard fruit, forest berries and subtle spice. The palate is layered and expressive, with juicy red and stone fruit, creamy texture, toasted nuts and a mineral-driven, extra brut finish.

Despite its richness, the wine remains precise and structured, showing the natural generosity of Meunier balanced by chalky tension and freshness from long lees ageing.

Best served well chilled and ideal with charcuterie, roast poultry, creamy cheeses or richer seafood dishes.

Champagne Herbert & Co. feels like what happens when a younger generation of Champagne growers decides tradition is important but also realises Champagne does not need to behave like a dusty luxury museum piece forever. Based in Rilly-la-Montagne in the Montagne de Reims, the estate combines classic family vineyard heritage with a much more modern, energetic approach to grower Champagne.

Thomas Herbert began developing his own cuvées in 2016 while working alongside the family domaine, gradually building a style that feels sharper, more expressive and slightly more rebellious than some traditional houses. The branding alone tells you this is not trying to imitate giant luxury Champagne empires with gold foil and intimidating tasting rooms. Everything feels cleaner, fresher and a little more playful without losing seriousness where it matters.

The vineyards stretch across some seriously impressive territory too, including Premier and Grand Cru sites around Rilly-la-Montagne, Ludes, Verzenay and Mailly-Champagne. Pinot Noir naturally plays a major role here, giving the wines structure and depth, but there’s usually plenty of freshness and precision keeping everything lively rather than heavy.
