More About Danbury Ridge Solstice Edition No 2 Brut NV

Solstice is Danbury Ridge's more ambitious take on English sparkling wine, made as a multi-vintage blend of Pinot Noir, Chardonnay and Meunier with part of the wine passing through a perpetual reserve. The base wines are fermented in oak before spending time on their lees, giving the finished wine considerably more texture and depth than your typical English fizz.

It's richer and more savoury than the bright, linear style you might expect from English sparkling wine, with ripe orchard fruit, apricot and citrus alongside toasted brioche, almond and a subtle oxidative character. There's plenty of acidity underneath the richness, finishing dry, long and beautifully textured. It's a sparkling wine that really comes into its own with food.

Danbury Ridge is a family-owned wine estate in Essex, founded by Michael and Heather Bunker and their daughters Janine and Sophie. The family planted its first vines in 2014 after recognising the potential of their agricultural land for growing Pinot Noir and Chardonnay. The first wines were released in 2021, and the estate has quickly established itself as a serious name in English still wine.

The Crouch Valley has a particularly favourable climate for English viticulture. Warm, dry conditions, relatively low frost risk and the moderating influence of the nearby North Sea help the grapes ripen while retaining freshness. The soils range from London clay to sand and gravel, giving the estate different sites to work with. Pinot Noir and Chardonnay are the main focus, with Meunier also grown for sparkling wine.

Winemaker Liam Idzikowski brings experience from wineries in California, Australia, South Africa and the Rhône. His approach combines careful vineyard management with restrained winemaking, using gentle extraction and thoughtful oak ageing to preserve fruit and site character. The winery uses open-top oak fermenters and concrete tanks for its still wines, with low yields and detailed parcel selection helping shape the final blends.

Chardonnay and Pinot Noir are the stars of the range. The Chardonnays balance citrus and stone fruit with texture, freshness and subtle oak, while the Pinot Noirs bring red and dark cherry fruit, floral notes and fine tannins. The estate also produces single-vineyard wines, including Octagon Block Chardonnay, which has attracted international attention, alongside the Spar Hill Chardonnay and River Valley Pinot Noir.

Danbury Ridge released its first sparkling wine, Solstice, in 2024, adding another dimension to the estate’s work with classic Champagne varieties. The project continues to expand, with new vineyard sites and a partnership with Burgundy’s Domaine Duroché announced in 2025. What makes Danbury Ridge interesting is its focus on the potential of English still wine, rather than treating it as a side project to sparkling production. The ambition is clear, but the wines are grounded in the particular conditions of Essex and the character of the vineyards themselves.
