The wine comes from the tiny, south-facing 1er Cru parcel of L’Homme Mort in the Fourchaume hillside at Domaine de Chantemerle, whose vineyards sit at La Chapelle-Vaupelteigne in Chablis. 

On the limestone and marl (Kimmeridgian) soils, the Chardonnay is vinified simply, in stainless steel tanks (and minimal wood) to preserve freshness and minerality, leading to a wine that shows taut citrus, white-flower notes and a distinct stony, saline backbone. 

In the 2020 vintage the result is a beautifully poised wine of refined texture, bright acidity and a persistent mineral finish, offering both immediate appeal and the capacity to develop in bottle.

Chablis works because it knows exactly what it’s doing. No giant oak bombs, no tropical fruit overload and no needlessly dramatic winemaking. Just Chardonnay grown on limestone soils producing crisp mineral white wine that somehow tastes even better every single time seafood appears nearby.

Domaine de Chantemerle sits right in that classic Chablis tradition. Family-run for generations, the estate focuses on clean expressive Chardonnay that lets the region’s famous Kimmeridgian limestone do most of the heavy lifting. Which, thankfully, it does very well.

The wines lean bright, fresh and properly mineral, packed with green apple, lemon peel, white flowers and that salty chalky edge that makes good Chablis so addictive. Even the richer Premier Cru bottlings keep loads of tension and energy rather than drifting into buttery overripe territory.

There’s a lovely honesty to the wines too. Nothing flashy, nothing trying too hard and no sense that the cellar got carried away showing off. Just classic cool-climate Chardonnay built around balance and drinkability.
