More About La Ferme des Confluences, Methode NV
A really interesting traditional-method sparkling wine from Thomas Foubert's La Ferme des Confluences in Muscadet country. Made from Chardonnay, Folle Blanche and Melon de Bourgogne grown on the region's granite and gneiss soils, it's given a full three years of bottle ageing on the lees. The result is far more serious than your average Loire fizz, combining the freshness of the Atlantic-influenced vineyards with the texture and complexity that comes from extended lees ageing.
It's bright, mineral and beautifully saline, with delicate bubbles, crisp citrus and green apple alongside white flowers and a creamy lees character. There's a lovely tension between the fresh fruit and savoury, stony finish, making this one particularly good with oysters, shellfish or anything salty and fresh.
