Los Siete Misterios - doba yej Mezcal

Los Siete Misterios is a mezcal that honors the spirit, heritage, and tradition of Oaxaca. Named after the Zapotec term for Agave Espadin, Doba-Yej, this mezcal is crafted from mature agave piñas sourced from the towns of Matalan, San Dionisio, and Yautepec. The process begins with roasting the agave in stone-lined pits, followed by hand-milling with a wooden mallet or horse-drawn tahona.

The aguamiel and fibers undergo spontaneous fermentation in open wooden vats, before being double-distilled in copper pot stills. This meticulous, time-honored process ensures that Los Siete Misterios embodies the authentic essence of mezcal, blending tradition with craftsmanship.
