Born and raised in Vouvray, Sébastien Brunet seemed destined to become a vigneron. He studied at the local viticultural school under the mentorship of local winemaker Vincent Carême. In 1974, his father Michel inherited 4 hectares of vineyards and began producing wines under the name Domaine Roche Fleurie. After completing his studies, Sébastien joined his father, working alongside him for six vintages. When his father passed away in 2006, Sébastien took the estate to new heights.
The wine is made from Chenin Blanc, with vines averaging 30 years old, grown in clay and silex soils from plots across the domaine. The vineyard spans 15 hectares at varying altitudes and exposures. The wine is vinified using the traditional method for sparkling wine, with 80% aged in stainless steel vats and 20% in 225L barrels, all fermented with indigenous yeasts. It ages on its lees for a minimum of 18 months. While not certified organic, the farming follows organic principles.
