A seriously good-value Futsu-shu from Watanabe Shuzo in Hida, Gifu, made with locally associated Hidahomare rice and polished to 63%. The brewery takes a straightforward everyday sake and gives it a little extra attention, blending in a small amount of prized aged Ginjo sake. The result is much more characterful than the category might suggest, with a soft, rounded texture and plenty of fruit and umami.
