Wilding belongs to the growing group of cider makers treating orchards with the same level of attention many winemakers give vineyards.

Based in North Somerset, the project is run by Sam and Beccy Leach, who farm organically and work with traditional orchards, wild fermentation and fully natural cider production. Fruit is gathered, matured and fermented slowly with native yeasts, producing ciders that behave much more like agricultural products than manufactured drinks.

The ciders vary from year to year depending on fruit, weather and harvest conditions. Heritage apple varieties and perry pears play a major role, bringing tannin, acidity, texture and complexity that often feels closer to wine than mainstream cider.

What makes Wilding particularly appealing is its commitment to vintage expression. Nothing is standardised. Each release reflects a specific harvest, orchard and season, which gives the ciders a sense of individuality that many larger producers simply cannot replicate.

British cider is becoming increasingly exciting once you move beyond the obvious names. Wilding sits comfortably among the producers leading that shift.
