Cantillon Gueuze is one of the world’s most revered traditional Belgian sour beers, brewed in Brussels by the legendary Brasserie Cantillon using centuries-old spontaneous fermentation methods. Often described as the benchmark gueuze, it blends young and aged lambic beers to create extraordinary complexity, vibrant acidity and deep earthy character.

Produced using wild airborne yeast and bacteria native to the Senne Valley, Cantillon Gueuze undergoes spontaneous fermentation in open coolships before ageing in oak barrels. The final blend of lambics of different ages is bottle conditioned, creating natural carbonation and evolving complexity over time.

Pouring hazy golden with lively carbonation, Cantillon Gueuze delivers aromas of lemon zest, green apple, hay, cellar funk, oak and earthy wild yeast. Wort cools overnight in open coolships beneath the Brussels air, beer ages for years in old barrels, and blending becomes an art form somewhere between brewing and alchemy.
