Cantillon Rosé de Gambrinus is one of the world’s most celebrated fruited lambics, a spontaneously fermented Belgian sour beer brewed in Brussels by the legendary Brasserie Cantillon. Made by macerating fresh raspberries in traditional lambic, Rosé de Gambrinus combines intense fruit character with the earthy funk, vibrant acidity and complexity that have made Cantillon a cult name among beer enthusiasts worldwide.
Brewed using traditional spontaneous fermentation methods, the beer is produced by blending young and mature lambic before secondary fermentation in bottle. Cantillon uses approximately 200g of raspberries per litre of beer, creating a striking ruby-red colour alongside bright aromas of fresh raspberry, citrus, cellar funk and subtle oak.
The palate is beautifully balanced between tart raspberry acidity, dry earthy lambic character and delicate natural sweetness from the fruit. Unlike many modern fruit beers, Rosé de Gambrinus remains bone dry, complex and intensely refreshing with layers of wild yeast character and evolving acidity.
At 5% ABV, Cantillon Rosé de Gambrinus is both refreshing and deeply complex. It can be enjoyed young for maximum fresh raspberry character or cellared for years as the fruit softens and deeper lambic complexity develops.
Best served lightly chilled, it pairs exceptionally well with soft cheeses, charcuterie, berry desserts, duck dishes and rich pâté.
