Trying to explain De Dolle to somebody unfamiliar with Belgian beer usually starts sounding slightly unhinged quite quickly. Tiny brewery in West Flanders. Wild labels. Extremely strong beers. Odd humour. Christmas ales capable of flattening small villages. Somehow though, it all works beautifully.

Founded in Esen in 1980 by brothers Kris and Jo Herteleer, De Dolle Brouwers became legendary by doing things entirely their own way and refusing to smooth out any of the wonderfully weird edges along the way. Even the name translates roughly to “The Mad Brewers”, which honestly sets expectations fairly accurately from the beginning.

The beers themselves are absolute Belgian classics. Oerbier remains one of the brewery’s defining releases, a dark powerful ale packed with dark fruit, spice, malt richness and a slightly funky edge that develops beautifully with age. Arabier brings a drier, aggressively hoppy blond ale character that was miles ahead of its time long before modern craft beer rediscovered bitterness. Then there’s Stille Nacht, the brewery’s famous Christmas beer, which arrives every winter like a beautifully dangerous festive hand grenade.

What makes De Dolle so beloved among beer obsessives is how uncompromising the brewery feels. Nothing is polished to perfection. Labels look hand-drawn, flavours can be eccentric and the beers often evolve unpredictably over time. But underneath all that chaos sits genuinely exceptional brewing skill and a deep understanding of traditional Belgian beer culture.

There’s also something wonderfully human about the whole operation. In a beer world increasingly dominated by branding meetings and algorithm-friendly releases, De Dolle still feels like a brewery run entirely by passionate eccentrics making the beers they personally want to drink.

For many drinkers, discovering De Dolle becomes a gateway into the stranger and far more fascinating corners of Belgian beer. Slightly chaotic, hugely characterful and completely unforgettable once you’ve fallen into the rabbit hole.
