From the Jura village of Pupillin, Jean-Michel Petit crafts this vibrant traditional-method sparkling wine from organically farmed Chardonnay. Fermentation begins with indigenous yeasts before a second fermentation in bottle and around 16 months ageing on the lees, giving the wine both precision and a gentle creamy texture.

In the glass it shows a pale lemon colour with fine, persistent bubbles. Aromas of ripe pear, citrus and fresh white fruit mingle with subtle notes of toast and brioche from the lees ageing. The palate is bright and mineral, balancing crisp acidity with a soft, rounded mousse and hints of apple, peach and lemon zest, finishing long and refreshingly saline.

Jura wine has a remarkable ability to taste both centuries old and completely modern at the same time, and Domaine de la Renardière leans beautifully into that strange magic. Based in Pupillin, one of Jura’s most famous villages, the domaine produces wonderfully expressive wines packed with minerality, freshness and the sort of savoury complexity that makes wine nerds go slightly feral.

The estate is run by the Mortier family and works with classic Jura grapes like Savagnin, Chardonnay, Poulsard and Trousseau, producing wines that range from bright and mineral to gloriously oxidative and nutty depending on the style.

The ouillé whites stay fresh and focused with citrus, salt and stone fruit character, while the more oxidative wines drift into walnut, curry spice and fino sherry territory in the best possible way. The reds are light, spicy and earthy, often carrying a delicate almost Pinot-like texture despite tasting unlike anything else on earth.

What makes Domaine de la Renardière so enjoyable is how natural and unforced the wines feel. They carry loads of personality without becoming chaotic or difficult, which is a balancing act not every Jura producer manages.
