More About Domaine Jonathan Pabiot, Pouilly Fumé 'Léon'

A beautifully precise Pouilly-Fumé from Jonathan Pabiot, made from Sauvignon Blanc grown on a mix of limestone, clay-limestone and flint soils. The vines range from 10 to 50 years old and are farmed biodynamically, with the wine given an extended 12 to 14 months' ageing on its lees. The result is a wine that puts freshness, minerality and terroir ahead of overtly tropical Sauvignon character.

There's a lovely combination of citrus, white fruit and subtle smoky mineral character, with bright acidity and a fine, stony finish. Elegant and restrained rather than overtly aromatic, with the flinty soils bringing that distinctive Pouilly-Fumé character.
