Vincent Dauvissat, Chablis 1er Cru 'La Forest' 2023

From the revered slopes of the La Forest parcel in Chablis, this 2023 vintage by Domaine Vincent Dauvissat is crafted from 100% Chardonnay planted on Kimmeridgian soils of clay-marl and fossilised oyster shells, with a southeast exposure that balances ripeness and freshness. The domaine employs biodynamic practices (though not certified) and minimal intervention in the cellar, fermenting primarily in inox with a portion in older barrels, maturing on lees and bottling unfined to preserve terroir purity. 

The wine opens with a luminous bouquet of lemon zest, white orchard fruit, oyster shell and dried white flowers, underpinned by subtle iodine and crushed stone minerality. On the palate it is medium-bodied yet dense and tensile, delivering superb acidity, crystalline minerality, and a long saline finish that speaks directly of its coastal limestone terroir.
