A beautifully polished Baden Pinot Noir from Fritz Waßmer, whose wines are known for combining the warmth of southern Germany with a more Burgundian approach. The fruit brings plenty of ripe cherry and red berry character, while careful oak ageing adds a savoury layer of spice without drowning out the fruit.

Silky and elegant, with juicy cherry, raspberry and a touch of darker fruit alongside fine tannins, gentle balsamic notes and delicate wood spice. There's a lovely creamy texture through the middle before a long, savoury finish.

Weingut Fritz Waßmer was founded in 1998 by Fritz Waßmer, whose family had been farming and growing grapes in the village of Schlatt for generations. He took a less conventional route into winemaking, teaching himself much of the craft and developing a particular fascination with Burgundy. That influence is clear in his approach to Pinot Noir, or Spätburgunder as it is known in Germany, and his ambition to produce wines with finesse, depth and a strong sense of place.

Based in southern Baden, close to the borders with France and Switzerland, the winery benefits from one of Germany’s warmest wine-growing climates. Waßmer has gradually built up a collection of vineyard sites across the region, including Herbolzheim, Kenzingen, Bombach and Staufen. The varied soils and microclimates allow him to explore how individual sites influence the finished wine, particularly when working with Pinot Noir and Chardonnay.

Spätburgunder is the estate’s calling card. The wines combine ripe cherry and red berry fruit with fine tannins, savoury complexity and carefully judged oak. Bottlings from sites such as Kaiserberg in Herbolzheim and Sommerhalde in Bombach show the importance Waßmer places on vineyard character. His interest in Burgundy is evident, but the wines retain the warmer fruit profile and distinctive personality of Baden.

The whites receive the same attention. Chardonnay, Weißburgunder (Pinot Blanc), Grauburgunder (Pinot Gris) and Auxerrois sit alongside less common varieties such as Viognier and Sauvignon Blanc. Depending on the wine, fermentation and ageing take place in stainless steel or oak, with the aim of preserving freshness while building texture and complexity. The estate also works with Syrah, Cabernet Franc and Merlot, adding further variety to the range.

Fritz Waßmer has become an important name in Baden, particularly for drinkers interested in German Pinot Noir beyond the more familiar regions. His combination of Burgundy-inspired winemaking, carefully selected vineyard sites and a willingness to explore different varieties makes the estate more than a one-grape operation. The focus remains on wines with structure and detail, where the fruit is generous but never the whole story.
