Blind Summit Whisky is a Leith-based independent whisky bottler specialising in small batch and single cask Scotch whisky, with a strong focus on cask influence, individuality and hands-on production. Founded by Jamie Dawson and James Zorab, the project grew out of years spent working within Edinburgh’s independent drinks scene, including specialist wine and whisky retail.
Rather than maintaining large permanent ranges, Blind Summit focuses on one-off bottlings sourced from distilleries across Scotland, often re-racked into unusual finishing casks including Bordeaux, Australian Shiraz, Rum and Tawny Port barrels. These releases are designed to highlight both distillery character and the influence of carefully selected secondary maturation, often producing whiskies with layered fruit, spice, texture and wine-driven complexity.
What makes Blind Summit especially distinctive is its boutique and highly personal approach. The founders source, taste, mature, bottle and distribute the whisky themselves, with each release paired with original artwork created in collaboration with local artists and designers. Production remains intentionally small scale, with many bottlings released in very limited quantities that quickly become sought-after among independent whisky enthusiasts.
The whiskies are typically bottled at natural colour and often without chill filtration, retaining texture and individuality while allowing cask influence to remain central to the style.
