Domaine Crève-Cœur is a small biodynamic estate in the southern Rhône run by Pablo Höcht, based around the villages of Séguret and Sablet beneath the Dentelles de Montmirail. Before starting his own domaine, Pablo worked as Maître de Chais at Château de Saint Cosme, one of the Rhône’s most respected estates, experience that strongly shaped his approach to balance, freshness and vineyard expression.
Since taking over the vineyards in 2010, the estate has been farmed organically and biodynamically with Demeter certification, focusing on old vines planted on sandy limestone soils at altitude. These cooler and more elevated vineyard sites help preserve acidity and aromatic lift while still retaining the warmth and depth associated with southern Rhône varieties.
Grenache forms the backbone of much of the range alongside Mourvèdre and Syrah, with fermentation carried out in cement vats and ageing in older oak barrels to preserve freshness and terroir character rather than emphasising oak influence. The resulting wines often combine dark berry fruit, wild herbs, spice and Rhône warmth with lifted acidity, mineral tension and a more restrained structure than many traditional southern Rhône styles.
Domaine Crève-Cœur has become increasingly admired among both Rhône enthusiasts and natural wine drinkers for wines that feel energetic, honest and deeply connected to place rather than heavily extracted or overworked. The wines balance traditional Rhône character with a more contemporary sense of freshness and drinkability while still retaining the depth and savoury complexity of the region.
