Bob and Jim Varner have been farming their own Spring Ridge vineyard in Portola Valley since 1980, focusing on a gentle, sustainable, and minimal‑intervention approach aimed at expressing purity, balance, and a strong sense of place. They use dry‑farming, no irrigation beyond natural rainfall, and maintain impoverished, unfertilized soils, which encourages deep root growth and concentrated fruit.

They avoid chemicals entirely, employing hand-hoeing and insect controls instead of synthetic herbicides or insecticides, and rely on manual labor for canopy work and pruning. All vineyard tasks, from pruning to harvest, are done by hand, with grapes picked in small lug boxes early in the morning to preserve freshness.

In their cellar, they continue this ethos. Indigenous yeasts handle fermentation, malolactic occurs naturally, and they practice light clarification with hand‑racking and gravity flow, avoiding fining and filtration. Sulfur is minimal, and the entire process is deliberately manual, promoting the purest expression of each vineyard block.

Together, these practices reflect a thoughtful, traditional approach: dry‑farmed, organically maintained vines, hand‑crafted cellar techniques, and minimal intervention, all designed to highlight terroir and clarity in their Cabernet Sauvignon and other wines

Varner Wines

Style: Winery

Country: USA

Region: Santa Cruz Mountains, California

The Santa Cruz Mountains have always felt slightly separate from the rest of California wine. Cooler, steeper and considerably less interested in Napa-style excess. Varner helped define that identity for decades.

Founded by brothers Bob and Jim Varner, the winery became one of the benchmark producers of Chardonnay and Pinot Noir from the Santa Cruz Mountains. Their work focused heavily on the Spring Ridge Vineyard, where elevation, Pacific influence and long growing seasons created wines with freshness and remarkable ageing potential.

The Chardonnays are often what people remember first. Mineral, structured and driven by acidity rather than oak, they helped demonstrate just how refined California Chardonnay could be when cooler vineyard sites were allowed to speak clearly. Pinot Noir followed a similarly restrained path.

What made Varner particularly important was its focus on transparency and site expression. The wines rarely felt built around power. Instead they reflected the cooler coastal conditions that make the Santa Cruz Mountains one of California’s most distinctive wine regions.

California contains plenty of famous wineries. Varner became one of the names enthusiasts quietly passed between each other instead. Usually a very good sign.
